Having Will Power

This isn't a post about having self discipline. This is a topic that isn't much fun to talk about, but it's so important!
Seriously.

Unless you have no one dependent on you, you need a will.

Especially if you have children.

Did you know that if both parents die and the extended family disagrees on who gets the kids, your children will be put into foster care until a judge can decide who will get your children. Now, I'm not saying that all foster care is bad. What I am saying is that there are bad foster care providers out there. And at a time when your kids are grieving the loss of their parents, would you want them to be taken away from their family and put in foster care with strangers? Would you want the decision of who should raise your kids to be put in the hands of a judge who has never met you or your children?

I know that I don't want that. If something were to happen to Dan and me, I want things set up to take care of our kids. I don't want there to be disagreements and rifts in our family due to our choice. I would rather have the people in our family angry at Dan and I for our choice, not angry at each other. I hope that if something were to happen to us, our family and friends would realize that when we made this decision, we put a lot of thought and even more prayer into it, and that we chose to place our children into the hands of people we trust to raise them how we would; people who won't be inconvenienced by the physical and financial burden of raising our kids; people that we know will make sure they continue to have relationships with all of their family.

Every one of us parents has a different reasons for how and who we would choose to raise our kids. But the most important point is that it is our choice to make, not the choice of a judge. But unless you have a will, you won't have a chance to make that choice.

So you don't have kids?
Imagine for a moment that your spouse were to die tomorrow. In your grief, you would be forced to choose where to have the funeral, where to have them buried- or would you want to cremate them? You'd need to pick out songs for the funeral, what type of casket to  buy, what to put on the headstone. And all of this is just the details you'd have to deal with within the week following their death.

Personally, I don't want to leave this burden on Dan. If something were to happen to me, I want him to know what I desire. That way, the funeral would reflect my desires; but more importantly, at a time when he was going through grief, this would be one way that I could lighten his burdens just a little bit.

How well do you both know your finances?
Finances are another reason to have a will in place. Things will still be difficult, but if a will is in place, there is proof of who you wanted your assets to pass to. Oftentimes, when a will isn't in place, much of the inheritance can end up passing to the government. That basically means that by choosing not to make a will, you may be choosing to pay some extra taxes. Additionally, if you have any separate accounts, there may be difficulty getting access to those accounts (which is why I would advocate sharing all of your accounts, but that's a whole other topic!).

But I can't afford it!
That's just not true.  While you may not be able to pay a lawyer to draw up a will for you, even just throwing something together yourself (free) is better than nothing. However, Dan and I went with Dave Ramsey's recommendation of  U.S. Legal Forms. It only cost Dan and I a total of $44 to do our will as well as our Living Will and Power of Attorney. Then we took it to our credit union and had a Notary Public notarize it for us.

Get a will today! For your sake, for your spouse's sake, and definitely for your children's' sake!

          Father's Day Candy Ties & Free Printable Gift Tags

          Candy Tie

          Back in my Mother's Day Gift Tags post, I mentioned that I volunteered to be in charge of getting a small gift for all the ladies at church.  Well as we were driving home from church that day, my husband asked what I was going to do for Father's Day.  (I guess that means I was volunteered again!)
          I told him I was thinking of doing something with ties and candy or candy shaped like ties or something of that nature. This is what I came up with.

          Candy Sticker Tie

          What you need:
          - Bag of M&Ms regular size
          - KitKat (regular size) or Cracker package
          -Tape
          -Stickers (optional)
          - Tie Printable (optional)

          Tips: (I figure the picture gives away how to make these but thought I'd share a couple tips.)
          - I taped the point first so you can push the m&ms down into it before you tape the top.
          - When I used the KitKat, I also taped the sides back on the m&ms since the KitKat was smaller length ways. 

          Cracker Candy Tie


          Gift Tags: 
          I also made these printable gift tags to go with them.  I played off the whole "tie" thing and purposefully kept them vague so they could go for anyone and would be great to give out at church.  But I also wanted some that the kids, that I'm going to rope into helping me make all these (my Sunday school class), could give to their own fathers or grandfathers.

          It's Menu Time (June)

          It's time once again for a menu for a new month.  During June, I'm going to be gone for about 2 weeks.  But I needed to plan meals for while we were at our friend's house, so I went ahead and planned the whole month.  This menu has far less grilled meals than I normally would do.

          Recipes for June Menu

          Recipes for June Menu

          These recipes go with the menu for June.

          Chicken Quesadillas

          2 tortillas for each quesadillas
          Shredded cheese
          Shredded chicken

          Place 1 tortillas on griddle pan on medium heat.  Sprinkle cheese and chicken on tortilla.  Place second tortilla on top.  Once bottom tortilla has browned some, flip and brown other side.  Use a pizza cutter to cut into 4 pieces and serve.

          Steak Sandwiches

          1 - 4 oz steak per sandwich
          bell peppers
          Onion
          sliced cheese
          Flat bread

          Grill steaks and then slice in thin strips.  Slice onion and bell pepper.  In a skillet on the stove, saute onion and bell pepper with steak strips.  Once onion is soft, place the onions, pepper and steak in a piece of flat bread and top with a slice of cheese.

          Grilled Pork Chops

          Using the McCormick Grillmates Marinade that you chose, follow the directions on the marinade package.  After marinated, grill and enjoy!


          BBQ Chicken Salad

          2 chicken breasts
          BBQ Sauce
          Salad Mix
          Tomatoes

          Slice chicken into thin pieces.  Mine are usually 1/4 inch thick.  Grill chicken.  When is cooked, brush with BBQ sauce and grill to caramelize sauce.Chop tomatoes.  Add tomatoes to salad mix.  Top with chicken and dressing of your choosing. Serve.

          Chicken Strips

          1 chicken breast for each person
          1 egg
          1/4 cup milk
          1 cup flour
          1 tsp garlic powder
          1 tsp season salt
          canola oil for frying

          In a large pot, heat oil on medium.  You will want your oil to be about 3 - 4 inches deep.  While oil is heating, cut chicken breasts into long strips.  In a shallow bowl mix egg and milk.  Whisk until mixed well. In a separate shallow bowl, mix flour, garlic powder, & season salt.  Dredge chicken breasts in flour mixture, then in egg and in flour again.  Test oil to see if it is hot by sprinkling a drop or two of water into the oil.  If it pops it's ready.  If it doesn't wait a few minutes and those water drops will pop when it's ready.  When oil is ready, gently drop strips into oil a few at a time.  You may need to turn the strip over.  When it is finished it will be golden brown.  Remove from oil and place on a cooling rack placed over a baking sheet.  I put mine in the oven at 250 to keep warm.  Fry remaining strips.  I serve mine with chicken cream gravy.

          Container Gardening

          I have had a change of plans this year.  My original plan was to plan a garden just like I did last year with a few modifications.  Then I learned we were going to buy a house and move.  So my plan B was to buy a house, be in by May 1 and plant a garden there.  Well that didn't happen.  The plan for the house now is to be moving in August. So that means I don't get to plant a garden at either place.  So I'm going to have to go back to container gardening.  I have done this in the past when we lived in an apartment.  Thankfully I still have some of the containers.

          About a month ago, my mom and I went to the fuchsia event at Fred Meyer.  They will fill your pots with soil and plant the plants you have purchased from them.  My mom and I shared a 6 pack of mini tomato plants and I got some marigolds to keep the bugs off my tomatoes.  I also got lettuce and basil and put those in a planter that fits on the rail of the deck.

          Then this last weekend I picked up 3 tomato plants from the farmer's market.  A friend sells tomatoes every year and we get tomatoes from him every year.  Sunday, I planted the tomatoes in 5 gallon buckets.  I had the Hardworking Husband drill holes in the bottom so they can drain.

          I will be gone for about 2 and half weeks. When I get back I will plant zucchini and squash in large round rubber feed pans.  I bought these while we were in the apartment.  The HH drilled holes in the bottom of these for me also.  I'm sure a pepper plant will end up in one of these also.

          I guess the container garden will keep me from going overboard this year.  But I'm hoping to have enough space next year to plant a huge garden.  I want to be able to sell some of my produce.  This year I'm selling raspberry and strawberry plants at the farmers market.

          Were you able to plant your garden like you wanted?  Or did a move change your plans?  Or maybe you couldn't get out as much as you wanted because of allergies?  Mine were so horrible this year.

          Granola Bites, or the Muffin Man

          I have been seeing a lot of different recipes for energy bites, granola bites, or whatever you'd like to call them, circulating on Pinterest. I'm kind of a skeptical person when it comes to someone saying a recipe is super easy and it's good and it's good for you. But I finally broke down and tried making these.

          My kids love them. I love them. My husband loves them. I'm excited to have found something yummy that will fit in the cookie category for this summer, but without heating the house up so much by baking.

          It was so funny, when I got them out to share with the kids, Miss Magoo was excited to try the Granola Bites. Little Man took one look at them and said, "The Muffin Man!" I have no idea why, but that's what he has named them. He will go to the fridge and ask me for the Muffin Man, and start giggling at how funny he is!

          I looked at several different recipes, and put them together using the ingredients I had on hand.
          So, because I like to give credit where it's due, here are the recipes I looked at:
          Granola Bar Bites
          Raw Cookie Dough Bites
          No-Bake Energy Bites

          The Granola Bar Bites and the No-Bake Energy Bites were basically the same recipe. The Raw Cookie Dough Bites sounded good, although a bit more work, but they contain agave, and after a lot of the information I've read about agave I've chosen to steer clear of it.
          So here's what I came up with:

          Granola Bites
          1 cup old-fashioned oats (or you can use quick oats-- I just figured since I was blending them it wouldn't matter)
          1/4 tsp. salt
          1/4 tsp. cinnamon
          1/2 cup flax seed
          1 cup coconut
          1/2 cup peanut butter
          1/4 cup honey
          1/2 cup chocolate chips (the other recipes call for mini chocolate chips, but I used regular and thought they turned out fine)
          1. Measure oats, salt, cinnamon, and flax seed in a food processor. Pulse until combined. (If you don't have a food processor, just mix the ingredients together in a bowl-- I just used the food processor because I wanted these to turn out less chunky.)
          2. Add coconut, peanut butter, and honey, and mix well. Stir in chocolate chips.
          3. Put in the fridge for 30 minutes. Then roll into small balls (I used a small ice cream scoop, then rolled them between my palms).
          4. Store in the fridge in an air-tight container for up to a week.
          I can't wait to try these again- they were really good. I'm thinking I might try using Craisins or chopped dried fruit in place of the chocolate chips to make them even healthier. These seem like you could change up a lot of the ingredients to make them more of what you and your family like- and I love changing recipes up!

          Potato Bites

          I was originally planning on blogging about something else today but my Mamaw asked for this recipe and Mamaw comes first.  {Technically, she is my hubs' Mamaw, or as my kids call her Mapel, but I claim her and she claims me.}

          I made these for my sister-in-law's baby shower. She is expecting her first, a baby girl, the end of July!!!!  Yay! for another sweet baby girl in the family. I will be sharing some more shower food goodies soon, but like I said these are first because Mamaw requested!

          Potato Cheese Bites

          Potato Bites

          adapted from Potato Cheddar Bites by Petit Foodie

          1 c. potatoes, peeled and grated (about 1 large potato)
          1 egg
          1/4 c. bread crumbs
          3 T. onion, chopped
          1/2 c. Colby Jack cheese
          1/2 tsp. season salt
          1/4 tsp pepper

          Preheat oven to 400 degrees and spray a mini muffin tin with non-stick cooking spray.

          Grate your potatoes (I used my food processor).  Let sit for a few minutes and squeeze out excess water.

          Combine all ingredients in a bowl.

          Fill each muffin tin to the top.

          Bake for 18 mins until tops are golden brown.

          Tips: If you are doubling recipe like I did for the shower, use a little less than double the bread crumbs and 1/4 cup onion.

          Freezer Friendly: Fruits and Veggies

          Your freezer is your friend. Whether you have an awesome deep freezer or just the freezer that's attached to your fridge, you can learn to use your freezer to help save you time and money. (And just for the record, if you don't have a deep freezer but you have space for one, I would definitely recommend making the investment- it will pay itself back!)
          I use my freezer all the time. Of course, there are the normal things in there, like ice cream (yum!) and ice, but there is also a plethora of other things in my freezer.

          When I spot a sale for onions or bell peppers, I buy a ton, chop them up, put them in freezer bags or even sandwich bags, and stock up the freezer.  When I need some for a recipe, I just pull some out and use it (no need to thaw!). This saves a ton of time; it saves money by getting a good sale price plus not having to run to the store for these items; and it also saves a lot of tears-- I get the onion crying done all at one time, instead of several times a week!
          I recently bought a huge bag of peeled garlic at Costco (it was a great deal, but I didn't realize it was close to expiring), so I went ahead and threw entire cloves of garlic in the freezer. They are too hard to cut with a knife, but I use my garlic press, and and they've been working great for me!
          Some vegetables will freeze better if they're blanched first.
          For some reason, when I was first married and heard people talk about blanching vegetables to freeze, it sounded like something that was really difficult. However, when I decided to try it, I was amazed at how quick and easy it really is.
          The time needed varies depending on the vegetable, but here is the main idea: you boil the vegetable for a couple minutes and then immediately submerge it in an ice bath. It's so easy, it takes hardly any time, and it helps your thawed product to turn out better, and not so mushy.  If you are freezing vegetables, I suggest checking to see if they need to be blanched first. My Betty Crocker Cook Book has timetables for blanching.

          Another great way to use the freezer is to freeze fruits.

          My kids love grapes, but it doesn't seem like we make it through the grapes fast enough. Plus, when the kids are little, giving them whole grapes is a no-no, but cutting them up is kind of messy. I've found that pulling the grapes off and then putting them in the freezer makes for an awesome treat that's really easy to cut.
          Any other fruits we have that are starting to go bad, I chop up and bag them. For things like strawberries, if I have enough I put 2 cups of chopped strawberries in a bag, so I can pull them out to use for making Fresh Strawberry Muffins. (I also do this with grated zucchini during the summer, bagging enough for my recipe of zucchini bread or zucchini bars.)  If I have bananas that are starting to go bad, I peel them and put them in a freezer bag, and when there are 3 bananas (or whatever your recipe calls for) I make banana bread.  When there isn't enough of a fruit to use for a recipe, I chop the fruit and bag it in a sandwich bag to use for smoothies.
          These are just a few of the ways you can make your freezer work for you, saving you time and money.

          MOORE, OKLAHOMA - The Lee family's home was destoryed during tornado in Moore, Okla., Dawnita, James, Josh Lee rode out storm, but lost home. No early tornado warning, James Lee is Deaf, could not heard sirens or wind. James sped to high school to pick up his son Josh and Lee family's pet cat has disappeared in rubble of home.



          James Lee was at work and he had no idea what was going on and saw on TV there was a storm and he was trying to get through his work to get back and get his car because he was in a company car. He came all the way from Edmond trying to get through the traffic and everything. He couldn't get through to them. James couldn't get through.



          So his son-in-law called and said his wife was safe and his son was safe. James' mother-in-law confirmed it. They were just so much grief. There needs to be shelters. They need to have basements or cellars or a safe room for their kids in the schools.           Updates Galore 

          Some of these updates have been promised, others I just wanted to share with you. When I realized how many there were, I thought I'd share them all at once.

          If you have been around here from the beginning, you may remember in my These are a Few of My Favorite Things post, I mentioned I was reading Desperate and I would give you a review when I was done.  Well I'm still not done. In fact, I haven't really read much of it at all, not because it wasn't good but because I have been super busy.

          Luckily Jamie was reading it at the same time and she did finish reading it and she wrote a review on it for me and all of you.  Check it out here.  I still plan on reading the book, hopefully this summer.

          Desperate Book Review

          I also mentioned in my New Favorite Things Post, that I was loving PicMonkey.  That's hasn't changed a bit and I have branched out into printables as you may have noticed lately with my Mother's Day Gift Tags and House Rules Printables.  I had a couple more in the works that should be coming soon.

          Turns out my Button Flowers are good for more than just Mother's Day.  Look how cute they look attached to our teacher's appreciation basket.

          ACCRA, GHANA - About 1% of the population in Ghana has hearing loss.



          The main challenge for the Deaf community is communicating with the larger society so that they can have proper access to health, education and employment in their country.



          The Ghana National Association of the Deaf (GNAD) has the vision to break down communication barriers. They are appealing for the government to recognise sign language as an official language of the Deaf in Ghana.

          Goal for May (Homemade American Cheese)

          I haven't forgotten about my goal for the year.  The goal for April was done early and with the busyness of May I hadn't gotten to it until now.  For this month, I decided to try making American cheese myself.  I like to use Velveeta to make grilled cheese.  It melts so nicely.  But it has chemicals in it that I don't really want to be consuming.  So I made it myself.  It turns out it's pretty easy.


          Homemade American Cheese

          1 1/2 tsp gelatin
          1 Tbsp water
          12 oz Colby Jack cheese, shredded
          1 Tbsp nonfat powdered milk
          1 tsp salt
          1/8 tsp cream of tartar
          1 cup plus 2 Tbsp whole milk

          Line a mini loaf pan with plastic wrap and set aside.  In a small bowl, mix gelatin and water together and set aside for at least 5 minutes.

          In a small sauce pan, heat milk on medium heat until it is almost boiling.  Meanwhile in a food processor, add cheese, powdered milk, salt, & cream of tartar.  Pulse a couple times to combine.

          When milk is heated, pour into something to make pouring into food processor easier.  Turn on food processor and pour milk in through feed tube. Then add the hardened gelatin to the mixture. Allow processor to run until mixture is smooth, stopping occasionally to scrape sides.

          Once the mixture is smooth, put it into the mini loaf pan.

           Place in the refrigerator for at least 3 hours.
