Almond Joy Granola Bites with Nutella


After making the Granola Bites I blogged about a while back, my kids and my husband kept requesting them. They get eaten up really fast!
For some reason, I kept thinking how tasty it would be if they were chocolatey and made with Nutella, instead of peanut butter. So, since I've thought it for a while, I finally decided to give it a try. I decided to make them with chopped almonds instead of chocolate chips.
They turned out phenomenal. I let my husband try one, and he ended up eating several. All of the Almond Joy Granola Bites were gone in 2 days.
These are still pretty healthy, but they taste like a treat.

Almond Joy Granola Bites with Nutella
1 cup quick oats (or blend 1 cup old-fashioned oats in a food processor)
1/4 tsp. salt
1 cup coconut
1/4 cup chopped almonds
3/4 cup Nutella

For these, I found that they needed to be mixed by hand. So, in a bowl combine the oats, salt, coconut, and almonds. Then mix in the Nutella.

Roll by Tablespoonfuls (my smallest ice cream scoop is a Tablespoon). Makes approximately 2 dozen granola bites. Store in an air-tight container in the refrigerator for up to a week.
