Every summer I think, we will not buy as many tomato plants next year. But then spring comes around, and I get gardening fever. I go to buy my plants (I used to start my own, but I'm too lazy now) and I see that it's cheaper to buy a 4 pack than it is to buy a single plant. And I like variety! So by the time I pick out some type of cherry tomato, a Roma, an heirloom, and an Early Girl or Big Beef or something, I've already got 16 plants.

So I always end up with too many tomatoes.

We eat pizza a lot. Too much, really. But if my hubby had it his way, we would alternate between hamburgers and pizza and tacos, and that would basically be it. So our compromise is pizza once a week. I know, that's a ton (we alternate between pepperoni, chicken alfredo, and bbq chicken, but still....).

So I try to kill 2 birds with one stone by using some of those tomatoes for fresh pizza sauce.  And I usually make this times 5 or 6, and then I freeze the extras in ice cube trays. After frozen solid, I put them in a ziploc bag and just pull out as much as I want. Usually 2-3 pizza sauce ice cubes is good for a pizza.

This pizza sauce is more like what you would get at a gourmet pizza shop, and it won't taste liked canned pizza sauce because the tomatoes aren't cooked. So just a heads up- it's different, but absolutely delicious!

The Easiest Fresh Pizza Sauce

1 clove Garlic
1 Tbs. fresh Basil
1 tsp. Salt
pinch of Pepper
1/4 tsp. Sugar
1 tsp. dried Oregano
2 Tbs. Oil (I use Olive)
2 Ripe Tomatoes
Tomato Paste to desired thickness

Blend the garlic and basil in a food processor-- you may have to scrape the sides a couple of times. Add the rest of the ingredients and blend without liquifying.

That's it!

Use it right away or freeze it in ice cube trays.

I Love Games: Golf {Card Game}

I love games. I always have.  I even make up games to help the kids clean. I wasn't the greatest sport as a kid but that didn't change the fact that I loved games.
My best friend growing up wasn't a great sport either but that didn't seem to bother either of us and we just shrugged off the card throwing at the end of the game. (Poor Jamie, who was friends with both of us!)
When I was in Idaho, that friend came down for a night to visit.  We ended up playing games (we taught her to play trash). The morning before she headed home, we were discussing all the old games we used to play.  I commented that I don't know how to play many of those anymore.  
So I thought it was about time to relearn some of the rules to all my old favorite games, especially since my oldest is 8 and VERY interested in games. I thought it would be fun to learn (or relearn) a game every month and share it with you guys.
I'm starting with a game, I learned during my college years because I was trying to teach this game to my son a couple weeks ago, only to realize later, I didn't have the rules right.  {I realized when I saw this similar game on Amazon and was reading the product description: Rat-A-Tat-Cat}

Golf {Card Game}
For 2+ players ages 5(ish) and up
Setup:
You need one deck with joker for 2-3 players or 2 decks with joker for 4 or more players.
Each player is dealt 4 cards which are placed in a 2 x 2 grid. The rest of the cards are placed in middle for a draw pile. Turn the top card over to start the discard pile.

How to Play:
Each player chooses two cards to peek at but does not show these to anyone else.

The object of the game is to have your four cards add up to less than the four cards of your opponents. (You want the lowest score just like in regular golf). Jacks are worth zero, jokers are worth -1 and all other cards are worth their face value with Aces being worth one.
On their turn, each player can choose to pick up the top card of the discard pile or draw a card from the pile.  After they pick the card, they can choose to replace any card in their grid with the picked card or just discard the card.

If they choose to replace a card, they place the new card face down in the spot they choose and must discard the card they replaced.  Play continues clockwise with players picking cards and replacing cards if desired.
When a player thinks they have the lowest total they can knock instead of drawing a card on their turn.

Once a player has knocked, all players turn over their cards and add up the total.  The one with the least amount, WINS!   You can set a certain amount of rounds to play beforehand or just play until you want to quit.

My oldest two (8 and 5) really enjoyed these games.  It's great for counting practice and memory skills (you have to remember what the cards you peeked at were!).



Also for fun I thought I'd include this song about the game LIFE (and life in general).  It talks about how it doesn't matter who wins because it's fun playing with the ones you love which is a lesson, I'm trying to teach my oldest.

Almond Joy Granola Bites with Nutella


After making the Granola Bites I blogged about a while back, my kids and my husband kept requesting them. They get eaten up really fast!
For some reason, I kept thinking how tasty it would be if they were chocolatey and made with Nutella, instead of peanut butter. So, since I've thought it for a while, I finally decided to give it a try. I decided to make them with chopped almonds instead of chocolate chips.
They turned out phenomenal. I let my husband try one, and he ended up eating several. All of the Almond Joy Granola Bites were gone in 2 days.
These are still pretty healthy, but they taste like a treat.

Almond Joy Granola Bites with Nutella
1 cup quick oats (or blend 1 cup old-fashioned oats in a food processor)
1/4 tsp. salt
1 cup coconut
1/4 cup chopped almonds
3/4 cup Nutella

For these, I found that they needed to be mixed by hand. So, in a bowl combine the oats, salt, coconut, and almonds. Then mix in the Nutella.

Roll by Tablespoonfuls (my smallest ice cream scoop is a Tablespoon). Makes approximately 2 dozen granola bites. Store in an air-tight container in the refrigerator for up to a week.

Healthier Fish Sticks

It's almost back to school. Even though I'm been trying to deny it, it's coming quickly. It's not all bad though, the return to school leads to a more structured schedule and routine around here.  I guess that also means, I need to get back to meal planning and cooking more easy weeknight dinners

Fish Sticks are normally considered kid food but while my kids really loved these they aren't only for kids. They were very tasty and good for you too.  Always a plus!


Fish Sticks

1-1.5 pounds fish (I used tilapia)
1/2 cup lowfat Greek Yogurt
1 tsp lemon juice
1 cup bread crumbs
1/2 tsp pepper
1 tsp season salt

Preheat oven to 350 degrees and line a cookie sheet with foil.  Spray the foil with non-stick cooking spray.
Combine yogurt and lemon juice in a small bowl.  Combine bread crumbs and seasoning in another bowl.
Cut fish into pieces (I cut each fillet into 2-3 pieces but left my fairly large.)
Dip fish into yogurt mixture (coating but not too thickly) and then into crumb mixture and place on prepared cookie sheet. Bake at 350 for 15-20 until fish is cooked through. It will be white and flaky.
Serve with ketchup if desired. (My kids liked them that way, but I ate mine plain.)

Healthier Fish Sticks

I served them with roasted potatoes and steamed vegetables.  Super easy weeknight dinner.  Going to have to use these again as they were really easy and all the kids asked for seconds (which is basically a miracle around here!).

SOFIA, Bulgaria - The U.S. Team Handball squad’s last game of the 2013 Deaflympics on Saturday came down to the final seconds.



After a last-minute Russian scoring run, the Americans were down 30-29 with six seconds left. Top U.S. scorer Stefan Bergan moved fast and scored a seven-meter penalty shot in the final three seconds to force a tie between the U.S. and Russia, 30-all.

Deaf Customers Sue Starbucks Over Mocking

NEW YORK CITY - Twelve Deaf Starbucks customers in New York City have filed a lawsuit against the Seattle-based coffee company, claiming discrimination. Starbucks employees allegedly mocked the customers multiple times over the course of several years, and once called the police on a monthly meeting of Deaf people.



"Cruel Employees" at two different Manhattan Starbucks mocked Deaf customers and refused to serve them, a stunning new lawsuit says.



"They were ridiculed, laughed at and told they had to leave Starbucks," said lawyer Eric Baum, who's suing on behalf of a dozen Deaf customers.



Jamie Riley, a spokeswoman for the mega-popular coffee chain, said they were aware of the allegations and were investigating them. "Discrimination of any kind is unacceptable at Starbucks," she said.



The suit says one incident took place at a Starbucks at 424 Park Ave. South in August 2012, when customer Alan Roth said a barista laughed when he placed his order, telling him he "sounded funny."



She "asked him to continually repeat himself as she laughed harder each time," and she was soon laughing "hysterically," the suit says.

When Roth demanded to speak to a manager, the employee started screaming obscenities at him and had to be restrained by other Starbucks staff, the suit says. Another employee told Roth to leave and never come back, the suit says.



Roth said he had "never before been so blatantly and maliciously been discriminated against."



The suit says Deaf customers also were forced to leave and had the cops called on them another time at the 13-25 Astor Place location, which had been chosen as the monthly gathering spot for an informal "Deaf Chat Coffee" social group. One of our favorite meals around here is Sausage & Rice Skillet. It's super easy to make even when you are still looking for things in boxes from moving. And it's of course delicious.

Sausage & Rice Skillet

12 - 16 oz smoked sausage link
1 green bell pepper, rough chopped
1 small onion, rough chopped
1 clove garlic, minced
2 1/2 cups chicken stock
2 - 3.5 oz bags boil in bag white rice
Salt & pepper to taste

Slice sausage in 1/2 inch slices. In a large skillet, sauté sausage until light brown. Remove sausage from skillet leaving drippings in the pan. You can add a little olive oil if there isn't much dripping in the pan. Add bell pepper and onion. Sauté for about for 3 minutes. Add garlic and sauté for another minute. Add chicken stock, rice and sausage. Bring to a boil then reduce heat to medium low. Allow to cook for 10 minutes or all the liquid is gone. Serve.

Amish Friendship Bread Starter

Throughout my adult life I've been given Amish Friendship Bread starter several times. Most of the time I make it a few times and then get busy or annoyed and it ends up in the garbage. But I hadn't had any in quite a while and decided to learn to make it for myself. Then I got to burden people with the dreaded starter.

 Most of the time when I got the starter it was in a zip top bag. It would get gooey on the top, and I hated having it sit around on my counter. So I decided when I made it I was going to do it in a commercial food storage container. It made for easier mixing, no gooey mess and no zip top bag always getting in the way. 

Amish Friendship Bread Starter by Coffee With Us 3 #recipes

Making the starter is pretty easy. 
1 pkg or 2 1/4 tsp active dry yeast 
1/4 cup warm water (105 - 110 degrees)
1 cups flour
1 cups sugar
1 cups milk

Dissolve yeast in water and let it stand for 10 minutes. In a food storage container (not metal), mix flour and sugar. Stir in milk and dissolved yeast. Cover and leave at room temperature. This is day 1. Days 2 - 4 stir with a spoon that isn't metal. Day 5 add 1 cup milk, 1 cup flour, and 1 cup sugar. Mix well.  Days 6 - 9 stir. Day 10 add 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup and set aside to make bread with. Remove another 2 cups divided into 1 cup into food storage containers or the icky zip top bags.  And you will now start over with the 10 day cycle with day 10 also being day 1. 

A blog post will follow with a recipe for to make the bread. I also found a website with so many recipes that can be made with the starter.

Black Bean Pesto

This might sound and look really weird, or even gross to some of you. This was a meal I was served by a vegetarian that I used to babysit for. It looked gross, but my parents taught us to ALWAYS eat whatever we are served. And it turns out, it was really good. This is actually one of my favorite meals now.

1 1/2 Tbsp. Olive Oil
1 Large Onion
1 Garlic Clove, minced
1 3/4 Cups Black Beans, drained and rinsed
3/4 Cups vegetable broth (I use chicken broth instead)
1 Cup Peas, fresh or frozen
2-3 Tbsp. Pesto (I usually use quite a lot of pesto, but I really love the flavor of basil)
salt and pepper to taste
Linguini, cooked according to the package
Sliced green or red peppers (optional)
Mozzarella Cheese (optional)

Heat oil in a large skillet over medium heat. When hot, add onion and saute for 3 minutes. Add garlic and saute 1 minutes. Remove from heat and set aside.
Place beans and broth in food processor (or blender) and puree until smooth. Poor into skillet with onions and garlic.
Heat over medium-low, adding peas, pesto, salt and pepper, and cook 7 minutes, stirring often until mixture thickens slightly.
Serve over noodles, and garnish with peppers and mozzarella cheese.

The Art Show

What do you do with all your children's art work?  We have a few ways that we display it around her but most really doesn't get shown off that much.  On the very last day we were in Idaho, my mom and my kids put on an art show. It's a great way to show off the kids artwork to family, friends or whoever you want to invite.

They worked all day long of different art projects and then displayed them in my mom's sun room for the family to enjoy after dinner.  The even named their artwork and made signs to accompany their artwork. I thought I'd share some of their work with you.

Paper Towel Mobiles
My mom showed them how to make mobiles with sticks, ribbon, and paper towels.  They colored the paper towels with markers and then sprayed them with water so the colored would run.  Then they cut the paper towels into pieces and strung them with ribbon onto a stick.

DP painted with marble and all the kids painted on rocks.  DP also made his own unique way to display the rocks he collected while on vacation.

Italian Sodas


Italian Sodas are easy to make, and cost much less if you make them yourself than if you buy them at a restaurant or coffee shop.
Plus, they're really easy. Like really, really easy.
  1.  The Ingredients: Club Soda, your favorite flavor of syrup, 1/2 & 1/2, Whipped cream and ice
  2. Fill a cup partways with ice. Add club soda, leaving several inches at the top.
  3. Add flavored syrup. Depending on the size of your glass, I would start with approximately 1 ounce- you can always add more!
  4. Use a spoon or straw to stir the syrup in. Then add a splash of 1/2 & 1/2.
  5. Top with whipped cream and enjoy!

Not Back to School!...yet {My Summer Printable}

I keep seeing a bunch of back to school stuff.  Am I the only one who wants to live in denial for a little bit longer?  We still have more than a week before school starts and most of our school supplies already bought, so it's fine to still live in the glory of summer, right?

We've had a great summer around here (personally at my house and here at the blog). It's fun to look back at all the good times and I think it's a good thing for kids too.  Maybe that's why teachers do the whole "what I did this summer thing."

I thought it would be fun to do one of those around here too before we even head back to school.  To remember all the fun we had and what all we have to be thankful for.  So I created this little printable for my kids to fill out.

I left off lines so my little ones could draw pictures but I will ask my oldest to write his out.  I will update this post with pictures of theirs once I get ink to print them off so they can fill them out.  If you homeschool, this might be a fun way to start your school year.

Cast Iron Cookie

When I lived in Texas, a restaurant opened up that served a dessert called a pizookie. It is a cookie baked in a tiny pizza pan.  It was one of the favorite desserts of my group of friends. The restaurant has since added more varieties to their menu. I had a red velvet pizookie when I visited that restaurant in Denver.

We don't have that restaurant near us, so I decided to make it for myself. The restaurant uses a pizza pan that is about 6 inches in diameter. I couldn't find one of those so I used a cast iron pan that is about 5 inches in diameter.  Since mine isn't made in a pizza pan, I'm calling mine a cast iron cookie.

These cookies are super easy to make.  Use any cookie dough you have on hand or can whip up quickly. I usually make sugar cookie dough or cowboy cookie dough. Place enough cookie dough in skillet to fill it about 2/3.  Press it down so it's even. Place in oven, preheated to the temp according to your cookie recipe. Bake until cookie is done. It usually takes about 20 minutes. It may still be a little doughy in the middle. Scoop ice cream on top and enjoy. It will be hot!
