Last Saturday my husband and his siblings threw a surprise anniversary party for his parents. I will be sharing about the punch I made and pictures of some of the decor next week.
After the party was over we had a lot of leftover food and punch ingredients, so I thought I would put some of them to use and make muffins. I used Kerry's Versatile Muffins as a base but cut the sugar a little since the strawberries & lemonade are already sweet.
Strawberry-Lemonade Muffins

Ingredients:
2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 sugar
1 large egg
1/4 cup canola oil
3/4 cup lemonade
1 cup diced strawberries
Directions:
Preheat oven to 375 degrees. Prepare muffin pan with liners or by spraying with no-stick spray.
Combine flour, baking powder, salt & sugar in large bowl. Add egg, oil, & lemonade and mix well. Fold in strawberries.
Spoon into prepared muffin cups about 3/4 full. Bake for 15-20 mins, until toothpick inserted into center comes out clean.

These muffins were so good that I'm thinking about baking in the summer again to make another batch! My kids loved them too!
