July was a wild month for me. I only got to make about half the meals. August is probably going to be just as wild or maybe even more. The Hardworking Husband and I are buying a house and moving. We also are going to Yellowstone with Lucy and her family and our mom. While a trip to Yellowstone will be so much fun, August is a month I just need to make it through. But so I have some sense normalcy, I have planned a menu. Having a plan helps me keep my sanity.

BBQ Chicken Salad by Coffee With Us 3 #recipes

BBQ Chicken Salad

2 chicken breasts
BBQ Sauce
Salad Mix
Tomatoes

Slice chicken into thin pieces.  Mine are usually 1/4 inch thick.  Grill chicken.  When is cooked, brush with BBQ sauce and grill to caramelize sauce.Chop tomatoes.  Add tomatoes to salad mix.  Top with chicken and dressing of your choosing. Serve.

Grilled Pork Chops

Using the McCormick Grillmates Marinade that you chose, follow the directions on the marinade package. After marinated, grill and enjoy!

Party Punch

One other recipe from the party that I wanted to share was the punch. This punch is so easy and super versatile. I wanted the punch to be a teal color, so I picked a blue Kool-aid. But you could make this just about any color you wanted. Just pick a flavor that will go with the other flavors in the punch.

Party Punch

1 - 46oz can pineapple juice (chilled)
1 - 12oz can frozen orange juice (thawed)
2 liter ginger ale (chilled)
2 pkgs Kool-Aid
1/2 cup sugar
1 quart water

Mix all ingredients except ginger ale. Mix ginger ale in right before serving. It's that simple! And so good. 

Makes about 1 1/4 gallons.

Pecan-stuffed Dates wrapped in Bacon


Once, a long time ago, my friend Ramona made pecan stuffed dates wrapped in bacon as an appetizer for a party she had. I remember her telling me that she had seen them on a cooking show on TV  (turns out it was Paula Deen).  I was skeptical when I tried them, but they're really good. Dan loved them too, and asked me to make them, so I've started making them for a lot of different events (and sometimes just to show my man I love him!).
The dates, bacon and pecans gives them a delicious sweet and salty, crunchy and chewy combination.  I've taken them to many events and although people are usually skeptical, I've never had anyone tell me that they didn't like them.
So when Kerry and Lucy were planning their mom's party and mentioned that they wanted to do different bacon-wrapped items, I volunteered to bring some of these tasty morsels.
Because I didn't know who had made them originally until I googled it for this post, my recipe is slightly different.

Pecan-stuffed Dates wrapped in Bacon
1 lb. Bacon
1 package pitted Dates
Pecan halves
  1. This might sound silly, but I always open the package of dates and count to see how many there are. When I just made them, there were 29 in the package. Then I check to see how many slices of bacon there are. In this case, there were 11 slices. I then count out enough pecan halves for the 29 dates, as well as 29 toothpicks. This saves me from having to get bacon on all the other ingredients, so I feel better that I didn't cross-contaminate.
  2. Preheat oven to 400 degrees.
  3. Cut the bacon slices into thirds.
  4. Cut each date down one side.
  5. Stuff each date with a pecan.
  6. Wrap each date in a slice of bacon and secure with a toothpick.
  7. Place on a baking sheet and bake for 10-15 minutes, until bacon is your desired crispiness.
  8. Remove from baking sheet and put on several folded paper towels to drain off grease.
  9. Enjoy! These can be eaten hot and fresh out of the oven, or they can be eaten later. Either way they taste great!

Mason Jar Floats & Vacation So Far

We are having a wonderful time in Idaho.  We are busy having fun and just enjoying being with my family.  I wanted to share one of my favorite treats from my mother's 50's themed party: Mason Jar Soda Floats.


Kerry had the great idea to have soda floats in mason jars.  We prepared the jars ahead of time by placing 2 scoops of ice cream in each one and then freezing them.
Right before the party, we filled our friend Marsha's ice bucket/cooler with ice and put some of the jars in the ice and then put soda on the counter above it so people could choose the soda they liked and make a float. They stayed frozen in there really well and then we just added more from the freezer when we were getting low.  Of course, I forgot to take a picture of this but it was similar to the one below but without legs.


My kids, my mother, and I have been enjoying the leftover mason jar soda floats.  I just loved the idea of putting them in mason jars that I just had to share it with you.


I also wanted to share some pictures of our vacation so far.  The kids are having a blast!  We have been swimming, going to the park, getting haircuts, and just relaxing.

Box Guitars

I remember making guitars out of boxes and rubber bands when I was a kid. But I can't exactly remember if it was rubber bands or string or what, and how exactly we made them.

One day in the early stages of this pregnancy, when the kids were being pretty cranky, and I wasn't feeling up to much, the idea came to me to make these with the kids.
I had two small boxes that I cut a rectangular-ish hole in. The kids helped pick out rubber bands and attempted to put them on the boxes, over the hole (I had to mostly do this for them). Then I added a strip of clear tape on each side just so we didn't end up with random rubber bands around the house, it's not necessary if you don't mind the rubber bands coming back off.

If you wanted to, you could let your kids paint or draw on the boxes before you got started-- or if you have older kids, they could mod-podge or make a collage on them first.

These didn't turn out nearly as cool as I remember them.... isn't it funny how perception changes as an adult? But to the kids, these are real guitars.

Little Man calls it his "zum, zum" and he's usually the one "playing" the guitar while Miss Magoo sings. It's hilarious. And he has to sing "zum, zum, zum" with every strum of the guitar. They both go up on the landing for the stairs and put on a concert, or they pretend they are in a marching band and go around and around the main floor of our house making a ruckus.

We made these some time during the spring, and the kids are still using them now, especially Little Man. Just today, he pulled his out and sang us a song.

Manitoba Swimmer at Deaflympics

WATCH VIDEO: (Captioned) - Manitoba's swimmer at Deaflympics. Thomas Osborn, The Kelvin High School student will represent Canada at the 2013 Deaflympics July 26-Aug. 4 in Sofia, Bulgaria.



WINNIPEG - Thomas Osborn lives in three worlds. Deaf, hearing and underwater. It's in the water world he is reaching heights never imagined by him or his family when his hearing, on a continuous decline since birth, completely disappeared at age 10.



The Kelvin High School student will represent Canada at the 2013 Deaflympics July 26-Aug. 4 in Sofia, Bulgaria. He's one of just six swimmers on Team Canada for the international multi-sport games, which is sanctioned by the International Committeee of Sports of the Deaf. (Deaf athletes are not eligible for the Paralympics so this is their Olympics.)



"There's a running joke with athletes who swim is that the pool is a second home," said Thomas, a member of the Manitoba Marlins Swim Club. "Our group spends over 25 hours (per week) training. Swimming has given me a lot of achievements, I'm proud of that, and I am hoping to achieve even more."



The youngest child and only son of Carolynn and DeWayne Osborn, Thomas will compete in five events at the Deaflympics the 400-, 200-, 100- and 50-metre freestyle events and the 200-m individual medley.

"It's amazing to me, for him to get to the level he is at in swimming, given what he's had to overcome," DeWayne said.



"We're very proud of all the things he's accomplished," Carolynn said. "You don't always get what you want in life. You play the hand you were dealt. So that's the hand we've been dealt, that's the hand he's been dealt, and I think he's played it remarkably well."

We are really enjoying ourselves in Idaho.  I'm having a great time with relaxing, swimming, and spending time with my family.  As Kerry shared on Tuesday we had a wonderful time at the party for my mom.
We had so much yummy food and we had some left over.  We had quite a few pretzel rolls left over. Kerry had gotten the pretzel rolls from Costco. They were so yummy that I hated for them to go to waste.
I thought it would be fun to make a breakfast style one and they turned out fabulous!

Pretzel Roll Breakfast Sliders
1 Egg per slider, scrambled (If you are making a bunch you will need a little less than 1 egg per slider. I used 8 eggs and made 10 sliders).
1 slice of cheese per slider
1 slice of bacon per slider, cooked
1 T cream cheese per slider (or cheese ball)
1 pretzel roll per slider

Toast the pretzel roll and spread with the cream cheese.  Top with egg, cheese, and bacon.  And Enjoy!

We really enjoyed these and they made a great dinner.  Of course, they would make a great breakfast. But as I mentioned before I'm super lazy when it comes to breakfast.

This is the tender moment a granny heard her baby granddaughter laugh for the very first time after doctors turned on her cochlear implant. Sarah Campbell, 57, had suffered hearing problems since childhood and went completely deaf around five years ago.



But, as the “Today” show cameras rolled on Tuesday morning, the nation watched as she heard the her tiny 1-year-old relative giggle with excitement. "I'm hearing her! Woo! Baby! She was laughing, I think," she told audiologist Michelle Montes as host Matt Lauer stood by.



The Norristown, Pennsylvania, native struggled to work and interact with people and constantly needed new and updated hearing aids.

British Columbia's Bree Sproule off to Deaf Olympics with Team Canada.



OYAMA - For most of her young life, volleyball player Bree Sproule has been a rarity in the small community of Oyama, British Columbia.



She's the only deaf person in Oyama, the northern-most point of Lake Country. She was the only deaf player on her school and club volleyball teams and the only deaf kid of six siblings, born and raised in Oyama.



But over the past year Sproule, 19, has been hanging with people much like her. She has completed her first year at Gaulladet University in Washington, DC, the world's only university specifically for Deaf people where she was a member of the women's volleyball team.



And last week she departed with 10 other Deaf volleyball players as part of Team Canada that will take part in the 22nd Deaflympics in Sofia, Bulgaria. Close to 4,000 Deaf people from 84 countries will be competing.



"It's really exciting, I've never been to Europe before," said Sproule through her interpreter, her sister Brooke. "It's going to be a new experience for me. I'm really excited to see the different culture and to learn about the history. It's going to be really fun to be with the team because we are all going to be together and there is going to be a lot of Deaf people there." Deaf Woman Survivor Southwest Airlines Crashed

WATCH VIDEO: (Captioned) - Deaf Southwest Airlines passenger recounts ordeal. Southwest flight reveals terror on the tarmac as nose landing gear suddenly collapses and plane with 150 people comes to a fiery skidding halt.



NEW YORK - Boeing 737-700 was bound for New York from Nashville, Tennessee. Southwest Airlines Flight 345 carried 144 passengers and six crew members - New Yorker Aidan Mack, who is deaf - one of the passengers. NTSB looking into cause of Southwest landing gear collapse.



Aidan Mack captured a similarly terrifying scene from her seat aboard the plane, filled with 144 passengers and six crews members. Her video shows some passengers beginning to panic after they were shaken by the hard jolt with no warning.



Ms Mack's story is even more incredible because she is deaf. She struggled to understand what was happening and fought panic - because she was unable to hear any of the announcements in the cabin.





'For me, it was just frantically trying to figure out the situation by watching the body language and the expressions of my fellow passengers, but I was really quite unique in that situation and all alone,' she told the TV station through sign language.

Cheese Ball

One of the foods we had at our mom's party was cheese balls. Our mom has been making cheese balls for a long time. We take them to parties and family gatherings. I am not allowed to show up to a family gathering with Handsome Husband's family without a cheese ball. And they are so simple to make! 

Cheese Ball by Coffee With Us 3 #recipes #appetizers

Cheese Ball

2 - 8oz blocks of cream cheese
1 cup shredded Colby Jack cheese
1/2 of 5 oz jar dried beef
6 green onions
1 Tbsp season salt or some other seasoning

Set cream cheese out to soften. Chop dried beef into small pieces. Cut up the green part of the green onions. (I use scissors to cut them up. I also plant the bottom that's left and then just cut the green part off when I need more.) In your kitchenaid mixer bowl, add all ingredients and mix using the whisk attachment. Or you could mix it with a spoon or your hand. After its mixed, separate it into 3 balls. Wrap each ball with plastic wrap and place in the refrigerator to chill for about an hour. Serve with crackers.

Retirement/60th Birthday Party by Coffee With Us 3


Lucy and I threw a retirement/60th birthday party for our mom. I'm sure she's glad I'm telling the world she's turning 60. And actually she isn't turning 60 until October and she retired in March. But we decided to have the party while Lucy is here.

The party was 50's theme. Our mom was born in the 50's and loves that era. Our friend Marsha came up from Denver to help us. She has thrown a 50's party before and has a bunch of decorations. Yay!
 
I did some research on 50's food. And the Hardworking Husband was happy to learn bacon wrapped food was a big trend. They also had what they called dunks. We know them as dips. Of course, burgers and shakes were big. Other food of the 50's were patte, melon ball cocktails, deviled eggs, cheese balls, and Mix Trix (Chex Mix). There are so many others, but I don't want to go on and on.

For the party, we had sliders, melon ball "cocktails", cheese balls, Mix Trix, spinach dunk, onion dunk, bacon wrapped lil smokies, bacon wrapped tater tots, bacon wrapped dates, cupcakes, floats and punch. I may have gotten a little carried away. But there were so many good foods from the 50's and I had help. A friend made the Mix Trix, Jamie made bacon wrapped dates, and another friend made amazing cupcakes (We did pay for these).


Marsha brought props to make a photo booth. That was a ton of fun. We used my iPad as the camera and we set it up to print to photo paper using the HP ePrint app. Marsha took the pictures, put them in a scrapbook and the guest wrote notes to our mom.




I think my favorite part of the party was the "memories". When sending out the invitations, we included a letter asking everyone to mail a memory of our mother to me. I got this idea from Pinterest. The Nothing But Bonfires blog did this for their father. I was hoping we would get at least 60 (because she's turning 60). We got over 60 and I was thrilled. I took those memories and put them in envelopes. We gave them to her during the party. I suspected that there would be a lot of tears. So I picked up a box of tissue for the party. And I was right about the tears. Our mom read a few, cried, and decided to read them over time alone so she could cry.
We had so much fun. It was great to see everyone. I wish we could have spent more time with everyone. Thank you everyone who came and everyone who sent memories. You all are such a blessing to us.

WATCH VIDEO: Breaking News - Duchess of Cambridge gives birth to a boy. The Duke and Duchess of Cambridge have decided their new baby boy's name will be George Alexander Louis.



LONDON - The long-anticipated royal baby of Prince William and Catherine, the Duchess of Cambridge, has been born in the private Lindo wing of St. Mary’s hospital in London. The 8 lb, 6 oz boy, George Alexander Louis was born at 4:24 p.m. London time Monday.



The Duchess, formerly known as Kate Middleton, was admitted to hospital at 6 a.m. U.K. time Monday after a short trip by car from Kensington Palace with William.



The child is third in line to the throne, following his grandfather Prince Charles and father Prince William. His arrival pushes William’s brother, Prince Harry, to fourth in the line of succession.



Before the birth, William and Kate, who were married in 2011, had said they were unaware of the child’s gender. Pure Fruit Popsicles

After Little Man's birthday, we had a lot of fruit salad left over from the Fun Fruit Salad I had made.  My kids love fruit, but even still, I knew I would end up throwing away a bunch of fruit if I didn't figure out something else to do with it.
So, I decided to make popsicles.
I got out the blender, dumped a bunch of fruit in, and pureed it.  The fruit salad was grapes, watermelon, and strawberries.  The popsicles turned out great. They froze well, and they tasted good. They were actually pretty sweet, too, despite the fact that I didn't add any sugar or sweetener of any kind.
I just made popsicles again, and just tossed in a couple handfuls of grapes, a couple handfuls of strawberries (with the tops cut out, of course) and that was that.
You can make these popsicles with whatever fruit your family likes best.

They even won my kids' approval. Miss Magoo was yelling, "We love popsicles!" Little Man was too busy eating his to smile for me.

All Deaf candidates Miss, Mister or models from the world will participation in Miss-Mister Deaf World, Europe 2013 and World Fashion Parade 2013 in Prague, Czech Republic.



At the very final evening of July 13, 2013 from 19.00 hours in the Congress Hall in Top Hotel Praha Blažimská 1781/4 Praha 4 - Chodov, will feature the deaf girls in traditional disciplines beauty contests. These global competition, the only one of its kind in the world and is held every year since 2001 Czech organizer.

Peach Pie Crisp

I love peach pie and peach cobbler but if I'm completely honest, I have to admit that I don't really like crust all that much.  So I took some of my freezable peach pie filling and combined it with an apple crisp recipe I've used for many years.  
It turned out really yummy, though it is pretty sweet. So a little bowl is all I needed to satisfy my sweet tooth. You could also probably go a little lighter on the brown sugar.

1 can peach pie filling or 1 pkg of freezable peach pie filling, thawed
1/2 c. flour
3/4 tsp. cinnamon
3/4 c. brown sugar
1/2 c. oatmeal
3/4 tsp. nutmeg
1/3 c. butter, melted

Preheat oven to 375.
Pour peach filling into 8 by 8 baking dish sprayed with no-stick spray. Combine dry ingredients and mix in butter.  Spread over peach filling.
Bake at 375 degrees for 30 minutes. Serve warm and with ice cream if desired.

Making an Emergency Binder


With all of the tornadoes, fires, floods and other natural disasters occurring lately, I thought it might be a good idea to talk about how you can prepare your family documents in the case that you have to evacuate quickly.

Dan and I have created an emergency binder for the "just in case."

In this binder, we've included birth certificates and social security cards for all the members of our family. Passports. Account numbers for our mortgages, utilities, bank accounts, credit cards, etc. Titles for our vehicles. Information on our insurance: medical, vehicle, and homeowners. A copy of our will. Basically any piece of important information is stored in clear plastic sheet protectors in the binder.

If an emergency happened, we would simply grab the binder and go, and we would have all the important documents that we might need in the aftermath.  This also makes it easier to keep your important documents in a safe, if you have one.


Kerry has a box instead of a binder, so if you have jewelry or other keepsakes, that's a great way to include them.  If you have other items in a safe or other place, just make sure you have a bag near them, so if you needed to go quickly you could simply push everything into the bag and run. You wouldn't want to be running around the house looking for things at a time like that!

Making a binder served another purpose for us. As we compiled our binder, we talked about different accounts and our finances. Because I am the one who takes care of paying bills, transferring money, and such, I wanted to make sure that if something happened to me, Dan would know what he needed to do, and where to find the documents he might need.  I feel like he now has a much better idea of what accounts we have, and the fact that he knows where all the information is if he needs it makes me feel better.

Another thing I do to prepare for emergencies is make a back up file of pictures and documents every 6 months. I actually burn 2 dvds at that time, and those go in the binder as well. When it comes down to it, if my house were to burn, the pictures would probably be the thing I would be most sad to lose.
