I haven't forgotten about my goal for the year. The goal for April was done early and with the busyness of May I hadn't gotten to it until now. For this month, I decided to try making American cheese myself. I like to use Velveeta to make grilled cheese. It melts so nicely. But it has chemicals in it that I don't really want to be consuming. So I made it myself. It turns out it's pretty easy.
Homemade American Cheese
1 1/2 tsp gelatin1 Tbsp water
12 oz Colby Jack cheese, shredded
1 Tbsp nonfat powdered milk
1 tsp salt
1/8 tsp cream of tartar
1 cup plus 2 Tbsp whole milk
Line a mini loaf pan with plastic wrap and set aside. In a small bowl, mix gelatin and water together and set aside for at least 5 minutes.
In a small sauce pan, heat milk on medium heat until it is almost boiling. Meanwhile in a food processor, add cheese, powdered milk, salt, & cream of tartar. Pulse a couple times to combine.
When milk is heated, pour into something to make pouring into food processor easier. Turn on food processor and pour milk in through feed tube. Then add the hardened gelatin to the mixture. Allow processor to run until mixture is smooth, stopping occasionally to scrape sides.
Once the mixture is smooth, put it into the mini loaf pan.
Place in the refrigerator for at least 3 hours.
